Zucchini Pacchadi/ Zucchini Chutney

              "Zucchini is ground together with dry roasted Corinader seeds, peanuts,dried red chillies, garlic and tamarind."



Ingredients :

Zucchini ------------------------------------- 2
Tomato--------------------------------------- 1 small
Dried red chillies--------------------------- 3
Coriander seeds---------------------------- 1 tbsp
Jeera/Cumin seeds------------------------- 1/ 2 tbsp
Garlic---------------------------------------- 2 pods/cloves
Fenugreek seeds---------------------------  4 seeds
Tamarind------------------------------------ 4(1" pieces)
Cilantro-------------------------------------- 1 tsp for garnishing
Oil-------------------------------------------- 1 tsp
 


Method :

  • Cut the ends off zucchini and discard them. Dice zucchini with skin and keep aside.
  • Dry roast coriander seeds, jeera, dried red chillies, garlic, peanuts, fenugreek seeds on low and keep aside to cool.
  • Heat oil in a kadai and add the diced zucchini, add chopped tomato and tamarind , close lid and cook till the vegetable is cooked.
  • Grind the dry roasted ingredients and add salt.
  • Add the cooked and cooled zucchini mixture to the ground powder and grind into a paste.
  • Add little water if needed.
  • Adjust seasonings. Garnish with cialtro.
  • Enjoy!!!

Friend's Baby Shower !

I made these for a friends Baby shower last year. Will share the recipe soon...






Aratikaya Dullu / Plantain cooked with Tamarind and Jaggery.

            "Plantain  is boiled and then cooked in tamarind pulp along with little jaggery."

This is made usually at festivals at my paternal grandmother's home.  A traditional South Indian dish made two ways. One with tamarind and jaggery and the other with green chillies and lemon juice.



Ingredients :

Plantains --------------------------3
Onion------------------------------1 small
Green chillies---------------------3
Red chilly pwdr------------------1/2 tbsp
Tamarind Pulp------------------- 1 &1/2 tbsps
Jaggery----------------------------2 tbsps
Turmeric-------------------------- 1/2 tsp
Cilantro----------------------------1 tbsp
Oil---------------------------------- 2tsps

For Tempering :

Mustard seeds-------------------1 tsp
Jeera/Cumin---------------------1 tsp
Chana dal------------------------1 tsp
Urad dal  ------------------------2 tsp
Garlic---------------------------- 1 pod, crushed
Curry leaves--------------------6-8
Dried red chillies---------------2-3 made into pieces
Oil-------------------------------- 2 tsps



Method :

  • Boil plantains , let cool ,remove the skin and mash it gently.
  • Alternately, pierce the plantains, wet a tissue remove excess water and fold it round one plantain , microwave for 3 minutes. Keep aside. Repeat with remaining plantains.
  • Let cool and discard the skins. Mash the plantains.
  • Heat oil in a kadai add the mustard seeds and jeera when they start crackling, add the urad and chana dal fry for 2 minutes or till the dal changes color. Add the garlic, turmeric, dried red chillies and curry leaves. 
  • Add  onions and cook till they are slightly brown. Add salt, red chilly pwd and the mashed plantain and mix well.
  • Fry for about 5-6 minutes or till the plantain turns a little brown.
  • Add the tamarind pulp and jaggery and mix well. Adjust seasonings.
  • Cook for another 5-8 minnutes .
  • Add cilantro and switch off the stove.
  • Serve with rice, rasam or sambar.
  • Enjoy!!!




 

Egg & Chicken Sandwich....

This is my go to Sandwich when we want to have something different. I make only the egg sandwich but Mr.IB wanted to add roasted thin sliced chicken breast to his .


Ingredients :

Organic large  boiled eggs-----------------------------  4
Organic Mayonnaise------------------------------------ 1&1/2 tbsp
Organic grapes, quartered ----------------------------- 10
Salt  ------------------------------------------------------  1/8 tsp
Black pepper--------------------------------------------  1/8 tsp
Chives, Cilantro, finely chopped --------------------  1 tbsp
Lettuce leaves-------------------------------------------  3-4 whole
Roasted thin sliced chicken breast-----------------  3-4 (u can use ham or turkey )
Toasted multi-grain bread ----------------------------   6 slices.




Method:
  • Peel the boiled eggs and half them.
  • Place them in a bowl and add mayonnaise, salt, pepper and gently mash with a fork (donot over do it , the egg should have some texture).
  • Add the chives, cilantro and grapes and mix.
  • Adjust the seasonings.
  • Place a lettuce leaf on a slice of toasted bread  and spoon in the egg mixture.
  • Place a piece of the roasted thin sliced chicken breast (or meat of your choice) and top it with another piece of toasted bread.
  • Enjoy!!!
